Looking for a new recipe to try out in your slow cooker?

We’re always eating the same old foods; mac & cheese, burgers, raviolis, sandwiches, and it was time to try something new.

Bok Choy was on sale, so I thought why not, let’s try it out. I will have to say it turned out pretty delicious!

Recipe

  1. Split and rinse your bok choy, sat to the side to dry
  2. In the medium mixing bowl combine: minced garlic, flour, hoisin sauce, rice vinegar, water, and soy sauce
  3. Stir with the whisk, set to the side
  4. In the slow cooker place the beef stir fry
  5. Now pour the liquid mixture over top of the beef stir fry and mix with the rubber spatula
  6. Now grab your bok choy, and cut the leaf off the stem
  7. After you’ve removed the leaf from the stem, set the leaf off to the side for later (I placed mine in a dishtowel on the counter)
  8. Take 3 bok choy stems and dice them into small cubes, and then place into the slow cooker
  9. Mix all contents in the slow cooker with the rubber spatula
  10. Place the lid to the slow cooker and cook for 4 hours on low or 8 hours on high
  11. 20 minutes before you are to serve, mince the bok choy leaves and mix into the slow cooker contents
  12. Serve on a bed of sticky rice
