I purchased The Culinary Bro-Down Cookbook by Mythical Chef Josh Scherer, and I instantly knew I need to make the No-Carb Sausage Waffle Sandwich (page 85).

So I instantly purchased a waffle maker, and made this amazingness! That was seriously made happiness in my tummy.

However, on Mythical Chef Josh’s Instagram story he made amazing homemade tater tots! Which made me want to make homemade tater tots, and then I remembered the sausage waffle and how I also had broccoli slaw in the freezer!

So I decided to make my own special Sausage Waffle w/ Broccoli Avocado Slaw with a side of tater tots! Man, it did not disappoint in any way, well except if you’re six and you don’t like your food touching.

Ingredients

Sausage Waffle

  1. Turn your waffle iron on
  2. In your large mixing bowl mix together; eggs, ketchup, and Sriracha
  3. Now add in minced garlic, sea salt, and ground peppercorn and continue mixing
  4. Next, add in your ground sausage, folding together to get an even mixture
  5. Set the mixture off to the side
  6. Open and spray your waffle iron with your cooking spray
  7. Using a measuring cup scoop a nice amount of sausage mix into the waffle iron
  8. Cook for 8-10 minutes or has a nice brown top
  9. Using your tons remove your sausage waffle onto a plate to serve

Broccoli Avocado Slaw

  1. Using your avocado knife cut and remove the pit
  2. Using a spoon scoop the avocado out of the skin into the smoothie cup
  3. Now carefully cut your lime into the half with the knife on a cutting board
    • Please note I am not responsible if you cut yourself
  4. Using your kitchen tongs place your lime, fresh-cut center down, and squeeze into the smoothie cup
  5. Now add your dash of salt, and almond milk
  6. Add smoothie blend lid, and blend for about 2 minutes or smooth
  7. Pour the avocado contents into a mixing bowl
  8. Overtop the avocado contents pour in the broccoli slaw
  9. With a rubber spatula mix contents
  10. Using a serving spoon place on top of your sausage waffle
  11. Now enjoy

The tater tots weren’t amazing, but they were fun to make. I’ll have to perfect that one.
