Who doesn’t love a delicious fresh strawberry cake?
We decided to take a simple white cake recipe and add a little strawberry pure to it to make a delicious strawberry cake!
Even better, we topped the strawberry cake with chocolate ganache to taste like chocolate covered strawberry.
This is a fun recipe to make with your kids learning how to bake.
Ingredients
- 4 Cups of Flour
- 3 Large Eggs
- 1 1/2 Cup Almond Milk
- 2 Cups Cane Sugar
- 1 Teaspoon Baking Powder
- 1 Tablespoon Vanilla Extract
- 1 Cup Room Temperature Butter
- 1 Teaspoon Salt
- 16oz of Strawberries
- Olive Oil

- Rubber Spatula

- Food Processor
- Cake Tester

Directions
- Pre-Heat oven to 350 degrees
- Remove the tops of your strawberries, and cut into chunks
- Place the strawberry chunks into the food processor and puree until there are no strawberry chunks
- Set strawberries off to the side
- In mixing bowl combine sugar, baking powder, and salt, stir with a whisk
- Set dry ingredients off to the side
- In your mixer combine eggs, milk, vanilla extract, and turn mixer on 3
- Slowly add your dry ingredients 1/2 cup at a time into your wet ingredients in your mixer
- Once all your dry ingredients have been added mix for around five minutes, or until smooth
- Turn mixer off, and scrape the sides with your rubber spatula
- Turn your mixer back on to 3 and slowly pour your strawberry pure into the contents of the mixing bowl
- Mix for 3-5 minutes or until evenly distributed
- Grab your cake or bundt pan, spray evenly with olive oil
- Turn your mixer off and pour your contents of the mixing bowl into the cake or bundt pan
- Make sure the contents of the pan is evenly distributed
- Grab each side of your pan, raise about 1 inch off the counter and drop about 4-5 times to make sure all the bubbles are out
- Place in oven and bake for 40 minutes or until the cake tester comes out clean
- Please remember to use your oven mitts when pulling the oven rack out of the oven
- Allow cooling for 30-40 minutes until you icing or covering with chocolate ganache
- Then cut and enjoy
