Every weekend I like to make pancakes, but plain pancakes or chocolate chip get pretty boring.
This weekend we decided to try Lingonberry Jam Pancakes, and they delicious!
Ingredients
- 2 Cup Unsweetened Almond Milk
- 1 Teaspoon Pure Vanilla Extract
- 4 Tablespoons Extra Virgin Olive Oil or 1 Ripe Banana
- 3 Cups Spelt Flour
- 1 Tablespoon Baking Powder
- 1/2 Teaspoon Baking Soda
- 1/4 Teaspoon Salt
- 1/2 Cup Lingonberry Jam
- 2 Large Brown Eggs
- Cooking Spray
Tools
- Turner
- Electric Griddle
- Kitchen Aid Stand Mixer w/ Whisk
- Dry Measuring Cups
- Measuring Spoons
- Medium Mixing Bowl
- Whisk
- Rubber Spatula
Directions
- In the medium mixing bowl mix together with a whisk: spelt flour, baking powder, baking soda & salt
- Set dry ingredients to the side
- Attach the whisk attachment to the mixer
- Place unsweetened almond milk, pure vanilla extract, eggs & extra virgin olive oil (or banana) into the mixer
- Turn the mixer slowly up to 3, blend for about 3-5 minutes
- Leave the mixer on, slowly add dry ingredients 1/2 cup at a time
- Recommendation purchase the Kitchen Aid Mixer Pouring Shield
- Mix for about 5 minutes, turn off the mixer scrape side with rubber spatula
- Add in the Lingonberry Jam
- Turn mixer on again for about 3 minutes
- Turn off & remove the mixing bowl from the mixer
- Turn on the electric griddle & spray with the cooking spray
- Using a 1/3 dry measuring cup, spray with cooking spray, inside and out
- Scoop pancake batter with the 1/3 dry measuring cup and place on the electric griddle
- When the pancakes start to bubble on the edges using the turner flip the pancakes
- Cook for a 2-3 more minutes and place on a serving plate and enjoy
