Want a Coffee Chocolate Cake, but don’t have any eggs?
Well, guess what you’re in luck, a Coffee Chocolate Cake recipe that requires no eggs! Oh and the best part, the frosting doesn’t have ten pounds of sugar!
That’s enough, let’s jump in!
Coffee Chocolate Cake
Ingredients
- 1 and 1/2 Cups Spelt Flour
 - 1/4 Cup Cocoa Powder
 - 1/4 Cup Coconut Sugar
 - 1 Tsp Baking Soda
 - Dash Sea Salt
 - 4 Tbs Coffee Grounds
 - 1 Tsp Vanilla Extract
 - 1/2 Cup Almond Milk
 - 6 Tbsp Coconut Oil
 
Tools
- Mixer
 - Large Bowl
 - Rubber Spatula
 - Measuring Spoons
 - Measuring Cups
 - Whisk
 - Cooking Spray
 - Cooling Rack
 - Cake Pan
 - Oven
 
Directions
- Pre-heat the oven to 350 F
 - Combine dry ingredients in large bowl: spelt flour, cocoa powder, coconut sugar, baking soda, sea salt & coffee
 - Mix dry ingredients with the whisk, and set to the side
 - In the mixing bowl combine: vanilla, almond milk, and coconut oil
 - Turn mixer on 3, slowly add in the dry ingredients
- Watch to not get to close to the whisk when pouring, or the dry contents will go everywhere. Would recommend a dry mixer guard, click here.
 
 - Mix ingredients until even and smooth
 - Spray cake pan with cooking spray, make sure to spray the sides & corners
 - Turn off mixer & pour cake batter into the cake pan
 - Place cake in the oven for 15-20 minutes
 - Using the cake tester to make sure the cake is cooked
 - Set the cake to the side to cool, once cool add spread frosting on top
 - Enjoy
 
Peanut Butter Frosting
Ingredients
- 1/2 Cup Maple Syrup
 - 1/2 Cup Spelt Flour
 - 1 Cup Peanut Butter
 - 1/2 Cup Almond Milk
 - 1 Tsp Vanilla Extract
 - 1/4 Cup Coconut Oil

- In the mixing bowl add together maple syrup, peanut butter, almond milk, vanilla, and coconut oil
 - Turn mixer on 3 and slowly add in spelt flour
 - Mix until smooth
 - Add to cake
 - Enjoy
