Finally, I cracked the secret to The Perfect Pancakes!

  1. In the medium mixing bowl mix together with a whisk: flax seeds, spelt flour, baking powder, baking soda, ground cinnamon & salt
  2. Set dry ingredients to the side
  3. Attach the whisk attachment to the mixer
  4. Place unsweetened almond milk, pure vanilla extract & banana into the mixer
  5. Turn the mixer slowly up to 3, blend for about 3-5 minutes to have the bananas mashed
  6. Leave the mixer on, slowly add dry ingredients 1/2 cup at a time
    1. Recommendation purchase the Kitchen Aid Mixer Pouring Shield
  7. Mix for about 5 minutes, turn off the mixer scrape side with rubber spatula
  8. Optional, add cacao nibs
  9. Turn mixer on again for about 3 minutes
  10. Turn off & remove the mixing bowl from the mixer
  11. Turn on the electric griddle & spray with the cooking spray
  12. Using a 1/3 dry measuring cup, spray with cooking spray, inside and out
  13. Scoop pancake batter with the 1/3 dry measuring cup and place on the electric griddle
  14. When the pancakes start to bubble on the edges using the turner flip the pancakes
  15. Cook for a 2-3 more minutes and place on a serving plate and enjoy
