Happy Birthday America! Hope everyone is enjoying their July 4th.
We celebrated by baking a brownie, adding cream cheese frosting and adding blueberries and strawberries to make a flag.
Brownie
Ingredients
- 2 Cups Unbleached Flour
- 1 Cup Coconut Sugar
- 1 Cup Pure Maple Syrup
- 1/2 Cup Melted Coconut Oil
- 4 Eggs
- 2/3 Cup Cocoa
- 2 Tablespoons of Pure Vanilla Extract
- Cooking Spray
Materials
- 1 Kitchen Aid Mixer
- 1 Set of Measuring Spoons
- 1 Set of Measuring Cups
- 1 Glass Cake Pan
- 1 Rubber Spatula
- 1 Metal Bowl
- 2 Oven Mitt
- 1 Cake Tester
- 1 Microwave or 1 Toaster Oven
- 1 Oven
Steps
- Pre-heat oven to 425
- Plug in Kitchen Aid Mixer, on a level surface
- Attach whisk & mixing bowl
- Measure dry ingredients, place in Kitchen Aid mixing bowl
- Turn on low speed add eggs one at a time
- Using the measuring cups, measure 1/2 cup of coconut oil, and place in the metal bowl
- Place a metal bowl in the microwave/toaster oven until melted
- Using the oven remove the metal bowl and pour coconut oil into dry ingredient mixture
- Add maple syrup & pure vanilla extract
- Mix ingredients until smooth, turn off Kitchen Aid Mixer
- Remove mixing bowl, set to the side
- Spray the glass baking sheet with cooking spray, extra in the corners
- Grab the mixing bowl, pour brownie mixture until the glass baking sheet, use the rubber spatula to scrape the sides of the bowl
- Once all the brownie mixture is out, use the rubber spatula to even out the brownie mixture in the glass baking sheet
- Place in the oven for 30-40 minutes, or until the cake tester comes out clean
- Remove from the oven with oven mitts, turn off the oven
- Let the brownie sit to the side to cool
Cream Cheese Frosting/Top of the Flag
Ingredients
- 4 oz of Cream Cheese
- 1/2 Cup Melted Coconut Oil
- 1 Teaspoon of Pure Vanilla Extract
- 2 Cups of Coconut Sugar
- 1 Cup of Blueberries
- 1/2 Cup Sliced Strawberries
Materials
- 1 Mixing Bowl
- 1 Fork
- 1 Rubber Spatula
- 1 Ninja Juicer
- 1 Set of Mixing Cups
Steps
- Using the Mixing Cups measure 2 cups of coconut sugar
- Pour coconut sugar into the Ninja Juicer container, and pulse until smooth
- Set the coconut sugar to the side
- In the mixing bowl add: cream cheese, coconut oil & pure vanilla extract
- Using the fork mix, slowly add the coconut sugar
- Mix until smooth
- Once the brownie is cool, pour the cream cheese frosting on top of the brownie
- Using the rubber spatula scrape the sides of the mixing bowl
- Then using the rubber spatula smooth out the cream cheese frosting evenly
- Add the blueberries & sliced strawberries to the top
