Tonight for dinner we enjoyed Sesame Tofu with Avocado Rice. It was simple and quick to make, always my favorite.
Sesame Tofu
There are two options here to make this, the quick way or the marinating way. The first way is the quick way and the second is the marinating way. The second one is good for more flavors for your tofu and the second is good when you forgot to marinate and you’re in a hurry.
Ingredients/Tools
- 1 Pack Extra Firm Tofu
- 1 1/2 Cup Sesame Oil
- 1/4 Cup Peanut Butter
- 1 Tsp Salt
- Medium fry pan with lid
- Cooking Spray
- Cutting Board
- Knife
- Small Mixing Bowl
- Fork
- Stovetop
- Rubber Spatula
- Dinner Plate w/ Utensils
Directions
- Spray fry pan with cooking spray
- Cut tofu, on cutting board with knife, into bite size chunks
- Place in frying pan (don’t place on stovetop yet)
- In the small mixing bowl combine: sesame oil, peanut butter & salt
- Using the fork stir until it turns into a liquid sauce
- Pour the sauce over the tofu, make sure everything is coated well
- Place lid on top, cook on medium for 15-30 minutes, stirring occasionally with rubber spatula (Depends on your desired texture and firmness)
- Place on dinner plate and enjoy

- Place tofu in storage container
- In the small mixing bowl combine: sesame oil, peanut butter & salt
- Using the fork stir until it turns into a liquid sauce
- Pour the sauce over the tofu, make sure everything is coated well
- Place lid on the storage container and let marinate for 24 hours in the fridge
- Remove from the fridge after 24 hours
- Spray fry pan with cooking spray
- Place in frying pan
- Place lid on top, cook on medium for 15-30 minutes, stirring occasionally with rubber spatula (Depends on your desired texture and firmness)
- Place on dinner plate and enjoy
Avocado Rice
Ingredients/Tools
- 2 Large Avocados
- 1 Tablespoon Dried Basil
- Pinch of salt
- Pinch of pepper
- 3 1/2 Cups Water
- 2 Cups Rice
- 1 Large Pot w/ Lid
- Rubber Spatula
- 1 Small Mixing Bowl
- Cutting Board
- Fork
- Spoon
- Knife
- Stovetop
- Dinner Plate w/ Utensils
Directions
- Place 3 1/2 cups water in pot
- Place pot with lid on the stovetop and turn the burner on high
- Wait for the water to boil, the place rice in, turn down to low & place lid back on top of the pot
- The rice will need to cook for between 10-15 minutes
- While the rice is cooking, place avocados on the cutting board and cut in half
- Remove the pits, discard
- Using the spoon scoop out the inside of the avocado into the small mixing bowl
- Add salt, pepper and basil
- Using the fork mash the avocado and mix the ingredients
- Once rice has finished cooking, remove the top and add avocado mixture
- Using the rubber spatula mix together so all the rice has been coated
- Place on dinner plate and enjoy
