We’re always eating breakfast for dinner in this house; Father’s Day is no different. We had Blueberry Banana Pancakes with fiesta eggcups!
Blueberry Banana Pancakes
Ingredients
- 2 1/2 Cups Flour
- 2 Cups Coconut Milk & 1/4 Cup
- 1/2 Cup Blueberries
- 1 Banana
- 1 Tbs Baking Soda
- 2 Eggs
- 1 Tbs Vanilla
Directions
- Combine flour, 2 cups coconut milk, vanilla, baking soda and eggs in the mixer
- Purée banana, blueberries & 1/4 cups coconut milK
- Add purée mixture into flour mixture
- Make sure purée mixture is combined well
- Spray cooking surface
- Using a spoon, make pancakes as large as desired on cooking surface
- Cook until lightly golden brown
- Serve
**The pancakes should be a hint of blue**
Fiesta Egg Cups
Ingredients/Tools
- 6 Eggs
- 1 Red Pepper
- 2 Handfuls fresh greens
- Dash Salt
- Dash Pepper
- Smoothie Maker
- Silicon Cups
- Cooking Spray
- Cookie Sheet
- Oven
- Cut red peppers into slices
- Combine red peppers, eggs, fresh greens, pepper & salt in the Smoothie Maker
- Blend ingredients
- Spray the silicon cups with cooking spray
- Fill silicon cups halfway full with egg mixture
- Place on cookie sheet
- Cook on 400 for 10 minutes
- Turn silicon cups upside down on plate and they will fall right out
**The eggs will be a hint of yellow/orange**
