We’re always eating breakfast for dinner in this house; Father’s Day is no different. We had Blueberry Banana Pancakes with fiesta eggcups! 

Blueberry Banana Pancakes

Ingredients

  • 2 1/2 Cups Flour
  • 2 Cups Coconut Milk & 1/4 Cup
  • 1/2 Cup Blueberries
  • 1 Banana
  • 1 Tbs Baking Soda
  • 2 Eggs
  • 1 Tbs Vanilla

Directions

  1. Combine flour, 2 cups coconut milk, vanilla, baking soda and eggs in the mixer
  2. Purée banana, blueberries & 1/4 cups coconut milK
  3. Add purée mixture into flour mixture
  4. Make sure purée mixture is combined well
  5. Spray cooking surface 
  6. Using a spoon, make pancakes as large as desired on cooking surface 
  7. Cook until lightly golden brown
  8. Serve

**The pancakes should be a hint of blue**

Fiesta Egg Cups
Ingredients/Tools

  1. Cut red peppers into slices
  2. Combine red peppers, eggs, fresh greens, pepper & salt in the Smoothie Maker
  3. Blend ingredients 
  4. Spray the silicon cups with cooking spray
  5. Fill silicon cups halfway full with egg mixture
  6. Place on cookie sheet 
  7. Cook on 400 for 10 minutes
  8. Turn silicon cups upside down on plate and they will fall right out

**The eggs will be a hint of yellow/orange**
