Every weekend I like to make pancakes, but plain pancakes or chocolate chip get pretty boring. 

This weekend we decided to try Lingonberry Jam Pancakes, and they delicious!

  1. In the medium mixing bowl mix together with a whiskspelt flourbaking powderbaking soda salt
  2. Set dry ingredients to the side
  3. Attach the whisk attachment to the mixer
  4. Place unsweetened almond milkpure vanilla extract, eggs & extra virgin olive oil (or banana) into the mixer
  5. Turn the mixer slowly up to 3, blend for about 3-5 minutes
  6. Leave the mixer on, slowly add dry ingredients 1/2 cup at a time
    1. Recommendation purchase the Kitchen Aid Mixer Pouring Shield
  7. Mix for about 5 minutes, turn off the mixer scrape side with rubber spatula
  8. Add in the Lingonberry Jam
  9. Turn mixer on again for about 3 minutes
  10. Turn off & remove the mixing bowl from the mixer
  11. Turn on the electric griddle & spray with the cooking spray
  12. Using a 1/3 dry measuring cup, spray with cooking spray, inside and out
  13. Scoop pancake batter with the 1/3 dry measuring cup and place on the electric griddle
  14. When the pancakes start to bubble on the edges using the turner flip the pancakes
  15. Cook for a 2-3 more minutes and place on a serving plate and enjoy
