White Cupcake with Brownie Frosting

Tonight I decided to make cupcakes, I took two recipes & substituted some things so they’d be healthier and without processed foods. So the white cupcakes ended up being tan instead of white, which is fine.

White Cupcakes aka Tan Cupcakes

  • 3 1/2 CupsĀ Spelt Flour
  • 2 1/2 Teaspoons Baking Powder
  • 1/2 Teaspoon Salt
  • 2/3 Cup Unsalted Butter
  • 2 Eggs
  • 1 1/4 Cup Coconut Milk
  • 1 Teaspoon Vanilla
  1. Mix Spelt Flour, Baking Powder, Salt in a large bowl
  2. Mix Butter, Eggs, Milk, Vanilla in a small bowl
  3. Add the butter mixture into the flour mixture
  4. Stir until all the lumps are gone
  5. Place in a cupcake tin, with wrappers, bake at 350 degrees for 20 minutes
  6. Place on a cooling rack

Brownie Frosting

  • 7 Tablespoons Coconut Milk
  • 7Tablespoons Unsalted Butter
  • 1 1/2 Cup Unbleached Sugar Cane
  • 2 Teaspoons Vanilla
  • 1 Cup Chocolate Chips
  1. In a saucepan on high add coconut milk, butter, sugar cane, vanilla
  2. Bring to a boil, stir to make sure nothing is stuck and everything is melted
  3. Let boil for 30 seconds, remove from heat
  4. Stir in the chocolate chips, keep stirring until they are completely melted
  5. Place in the freezer for about 20 minutes, it shouldn’t be hard and it shouldn’t be liquid
  6. Spread on cupcakes and then enjoy cupcakes

**I stored my cupcakes in the fridge since the frosting had coconut milk in it.
